Chocolate Spice Cake ( don't use pumpkin pie spice)

It's me again! hope you missed me. Got another Yummy recipe. It's called chocolate spice cake, and It's from a book called, "Teens cook" by Megan and Jill Carle.

cake

1 tbsp. vinegar
1 cup milk
1/2 cup butter
1 egg
1 cup sugar
1 tsp baking powder
1/4 teaspoon salt
1 tsp. ground cinnamon
1 tsp ground allspice
1 tsp ground cloves
1 tsp baking soda
2 tbsp. unsweetened cocoa powder
2 cups flour
1 cup raisins (optional)

Preheat oven to 350 degrees F. lightly butter or spray two 8 in. round cake pans.

place the vinegar into a one cup measurer and top it off with milk till it's full.
set aside.

place butter and egg into a large bowl and beat with an electric mixer on medium high till the mix is fluffy.
add sugar and mix for 1 minute.

add baking powder, soda, cloves, cinnamon, allspice,and cocoa powder and mix for 1 min. or until mix is completely even in color. add flour and mix till completely incorporated. Add the milk and vinegar, and mix till completely smooth.add raisins, and mix till evenly distributed.

put half the batter in each cake pan, and spread evenly. Bake the cakes at 20 -25 minutes, or until a toothpick, inserted in middle of cake,comes out clean.  place a wire cooling rack on top of each cake pan. hold both wire rack and cake pan, and turn them over, and remove pan.cool cakes to room temperature.

Frosting

3 oz. unsweetened chocolate
1 cup butter
1 egg
3 cups powdered sugar
1 tsp. vanilla
1 1/2 tbsp milk
pinch of salt

place unsweetened chocolate in a microwave safe bowl. microwave until completely melted.

place butter and egg in a large bowl, and beat with electric mixer until fluffy. Add sugar and melted chocolate and mix, until completely even in color. Add vanilla, milk, and salt. mix until combined.

place on of the cakes upside down on a serving platter, and cover top and sides with half of frosting. place remaining cake upside down on top of the frosted cake, and spread the remaining frosting on the top and sides, blending the upper and lower portions as you go.

Whew! That took a while.
When I made this cake, I played around with the spices a little. I added a bit of nutmeg, and some pumpkin pie spice.The nutmeg was pretty good, but don't add the pump. pie spice . It makes it taste a little like, well you can guess. I also added one more cup of milk than I needed to. It all came out well in the end though. (even if it was a little doughy and pie tasting)
When I took it out, I was to overexcited to remember to let it cool. The  frosting melted right off. I scooped it back in, and was a little more willing to wait after that.  After that, we all enjoyed a nice cake together.

Eatmore (and eat more and eat more)

This is a recipe called Eatmore. Not eat more. Eatmore. It's fairly simple, easy, fast, and above all, Yummy!

put together in frying pan

2 cans of corn
2 cans of stewed tomatoes
3 tablespoons dried onion (or 1/2 cup fresh onion)
1 can beef ( or cooked hamburger)
2 1/2 cups macaroni noodles

turn burner onto medium and cover with lid, or top

cook until almost all of the juices have been absorbed, then put a layer of cheese on top, with dollops of sour cream for a finishing touch.
Then, all you have to do is enjoy it!

Grand prize chocolate

Hey people!
I've got a new recipe for ya! This one's from a cookbook called "The search for the perfect chocolate chip cookie." This book is full of cookie recipes! It was written because of a contest for the best choc. chip cookie. This recipe is by "Jr. League of  Las Vegas" from, you guessed it, Las Vegas! This cookie was the grand prize winner of the competition!

Double Chocolate chip cookies #1

1 3/4 cups flour
1/4 tsp. baking soda
1 cup butter or margarine (softened)
1 tsp. vanilla extract
1 cup granulated sugar
1/2 cup brown sugar, firmly packed
1 egg
1/3 cup unsweetened cocoa
2 tbsp. milk
1 cup semisweet chocolate chips
1 cup chopped nuts (optional)

When I made these, they were yummy! I f you make them I hope they come out well.

Apple pancakes (don't forget the baking soda!)

        This is my first blog I've ever done. I'm 12 years old, and will be relating my cooking experiences on here. One of my big goals in life is to go to Culinary school, and get a job as a chef somewhere.The first recipe we're going to start with, is Apple pancakes.

       This is not the first recipe I've done, but it seemed like a good place to start. This blog is going to be quite hit and miss, because I don't know how often I will get to make something new.I will try to write as much as I can, so bear with me. My mom wrote this one down for me to try. Here it goes.

Mix in bowl

one and one half cups of flour
one half cup dry oats
two tablespoons sugar
one teaspoon salt
two eggs
two tablespoons oil
two and one fourth cups milk
two tablespoons vinegar
one teaspoon cinnamon
two teaspoons baking soda
one teaspoon nutmeg
dried apple slices soaked in water

Pour on to griddle in generous amounts
Flip over, when sides are a light golden color
Then sit back and enjoy!

When I made these, my mom forgot to put baking soda in the recipe, so the pancakes, came out yummy, but very crepe like in texture. A word to the wise, NEVER  forget the baking soda. I'll try to write soon, with another tasty recipe.
